So I have MW3 and a softmodded Wii and theres a bug on MW3 where everyones profile gets reset sometimes. Unfortunatley, you are not able to copy the MW3 save data to an SD Card so I was wondering if there was another way to do so.

You can use savegame manager Savegame Manager - WiiBrew. It's downloadable from the HBB too.
Krank reported on a corrupted profile/save bug in the guide. There's absolutely no reason to start another MW3 thread... read it and if no solution it's best put in there.
