I haven't played in a while but if I remember correctly you have to hit up on the D pad

I think you change your weapon to gernade and throw the remote while holding onto it.

Press left on the D-pad (-|-) until you have the grenade in your hands, then press B to aim it wherever you want to throw it, and then thrust the wii remote upwards (or to the front) and the grenade will also be thrown.

There is also a way to uncork it so it explodes instantly, but I don't remember what button was it.
