You may find GC game back ups in .iso or .gcm format. If its iso, then you just burn it using IMGBurn, if its in .gcm format rename .gcm to .iso and burn using IMGBurn.

You can also creat multi game discs

When you rename it to .Iso, can you burn it to a regular DVD-R? Would it work if i burned a gamecube backup (originally in .gcm, renamed to .iso) to a Sony DVD-R? or do you have to get the same size disc as a gamecube disc

Regular DVD-R is fine. No need for Mini-DVDs.
