I'd test a backup first. Try something simple like Wii Sports or Mario Galaxy. From there, I'd run the firmware update disc / configuration utility. Finally, run an original game to set the chip's region.
1) After I install it, do I put an original game in and start the Wii to activate Region Free? Will any original game do (ie WiiSports)? Will a menu pop up asking me to activate Region Free?
2) I read somewhere about installing/running something that will prevent any accidental bricking if I were to load updates from a different region disc. What is the process for doing so?
Yes, that will work, a backup will work too, but its very easy with a original over backup *incase it doesnt work =P*
once u update your wiikey, put back in the installer disc, and then you can block updates
or you can get homebrew channel, and install starfall, which can block updates, give you region free games/wads, and prevent bricks
