OK - did a lot of hackiing this weekend and I think I'm back where I started from.
First did the Homebrew. No problem. Then did the mPlayer DVD hack. Didn't realize I had 3.4 so I downgraded to 3.2U. Did the mPlayer DVD hack again and it worked fine. But then tried to run Rock Band. Didn't want to play without the upgrade. Couldn't figure out how to bypass it. Gotta play Rock Band. Upgraded (to what I don't remember, 'cause...)... then tried to play Wii Fit. Required yet another upgrade. Gotta play Wii Fit (These are about the only Wii games we have, so gotta play 'em).
Only problem now is that whenever we play Wii Fit, the video-out blanks fairly regularly, but only once in any given specific scenario - like it's self correcting, but these errors keep popping up. Wife is getting annoyed. "You did WHAT to our $500 system!?!?" But honey, the only part that's messed up is the $250 part.
Dog house is looking pretty warm tonight.
NOTE: Wife is in the Living Room right now, so I don't know exactly what version I'm back up to on the Wii. Probably 3.4E. Which brings me to another point - is there ANY DVD with Rock Band and Wii Fit solution at the moment?

Looks like the firmware was only upgraded to 3.3E. If I can get past the flicker on Wii Fit, Rock Band seems to be working fine. Looks like after I try each event, I don't have the problem any more (like self fixing, but I haven't confirmed that the problem doesn't return. Haven't tried the DVD after all the upgrades...
Admiral (or anyone else), I think I still need your help. Wii Fit flickers (video out shuts off for up to 5 seconds), even after going all the way back up to 3.4E. I'm sure that some of this was related to the Divx install for mplayer I did back in 3.2 mode, but I don't know how to rewrite where I did that hack.
Unless this is a known issue with Wii Fit (forget the hacking for now) to cut the video out during random parts of play, I'll need to get an answer on how to undo the Divx install.
